<p>當歸有「十方九歸」和「藥王」之美稱，特別是用於治療婦科疾病更是功效卓著，素有婦科「聖藥」和「血家百病此藥通」之說。</p>
<p>據明代李時珍《本草綱目》的說法是：「當歸調血，為女人要藥，有思夫之意，故有當歸之名。」可見，其解釋與上述詩詞不謀而合。此外，當歸還有另一種意義，即宋代陳承《本草別說》云：「使氣血各有所歸。恐當歸之名，必因此出也。」兩種說法均通，後者尤為貼切。</p>
<p>現代醫學研究證明，當歸粉含有17種氨基酸，包括人體必需的但不能合成的7種氨基酸。含有23種無機元素，其中 16種為人體所必需的，如鈣、銅、鋅、磷、鉀、鐵等。</p>

<p><span style="color: #800000"><strong>二、活血調經</strong></span><br />當歸具有顯著的活血止痛、通經調經的作用。而且當歸本就有著「婦科聖藥」的美譽，所以那些有月經不調、痛經、經期提前的女性而言統統是頗適合的。畢竟當歸裡面富含大量的維生素，有機酸和揮髮油，所以其可以降低一下血管的阻力，增加血液的循環。</p>

<p>《本草經疏》記載黃耆：「功能實表，有表邪者勿用；能助氣，氣實者勿用；能內塞，補不足，胸膈氣閉，腸胃有積滯者勿用；能補陽，陽盛陰虛者忌之；上焦熱盛，下焦虛寒者忌之；病人多怒，肝氣不和者勿服；痘瘡血分熱甚者禁用。」提到了服用黃耆的諸多禁忌，在使用時應當留意。</p>
<p>《本草綱目拾遺》記載，黃耆味甘，性微溫，歸脾經（腸胃功能）、肺經（呼吸系統、皮膚），常聽人說黃耆「補氣」其實就是補脾、肺的氣。</p>
<p>《珍珠囊》：「黃耆甘溫純陽，其用有五：補諸虛不足，一也；益元氣,二也；壯脾胃，三也；去肌熱，四也；排膿止痛，活血生血，內托陰疽，為瘡家聖藥，五也。」<br />主要含有甙類、多糖、氨基酸及微量元素等。<br />1.具有增強機體免疫功能、利尿、抗衰老、保肝、降壓作用。<br />2.能消除實驗性腎炎尿蛋白，增強心肌收縮力，還有促雌激素樣作用和較廣泛的抗菌作用。<br />3.膜莢黃耆皂甙甲具有降壓、穩定紅細胞膜、提高血漿組織內c－AMP的含量、增強免疫功能、促進再生肝DNA合成等多種作用。<br />4.黃耆多糖具有提高小鼠應激能力、增強免疫功能、調節血糖含量、保護心血管系統、加速遭受放射線損傷機體的修復等作用。</p>

<p>牛蒡含菊糖、纖維素、蛋白質、鈣、磷、鐵等人體所需的多種維生素及礦物質，其中胡蘿蔔素含量比胡蘿蔔高150倍，蛋白質和鈣的含量為根莖類之首。牛蒡根含有菊糖及揮髮油、牛蒡酸、多種多酚物質及醛類，並富含纖維素和胺基酸。</p>
<p>牛蒡根含有人體必需的各種胺基酸，且含量較高，尤其是具有特殊藥理作用的胺基酸含量高，如具有健腦作用的天門冬氨酸占總胺基酸的25%-28%，精氨酸占18%-20%，且含有Ca、Mg、Fe、 Mn、 Zn等人體必需的宏量元素和微量元素。</p>

<p>《本草綱目》：「益腎氣，健脾胃，止泄痢，化痰涎，潤皮毛。」</p>
<p>《本草正》：「山藥能健脾補虛，滋精固腎，治諸虛百損，療五勞七傷。第其氣輕性緩，非堪專任，故補脾肺必主參、朮；補腎水必君茱、地；澀帶濁須破故同研；固遺泄仗菟絲相濟。」</p>
<p>乾淮山具有健脾、補肺、固腎、益精等多種好處，是中式湯水的最常用材料之一，腎虛脾弱、常泄瀉的人宜常吃。乾淮山要經硫磺熏製以延長保質期及減少蟲蛀、防霉、防腐。硫磺當中所含的二氧化硫易令進食者出現過敏反應，所以，坊間有另外一款生曬淮山的選擇，正常情況下，乾的山藥表面應該呈淡黃色，亦帶有清晰的紋理，如發現顏色過於雪白、表面沒有紋理，有可能在製作過程中使用過多硫磺。<br />多汗、反覆感冒的氣虛者，在秋季應該適度增加淮山的攝入量。雖然乾淮山性平味甘，脾腎雙補，在上能清，在下能固，和小便而能止大便，所以便秘者不宜多吃。</p>

<p><span style="color: #800000"><strong>一、補脾肺腎</strong></span><br />淮山營養豐富，澱粉質及蛋白質含量多，食用不但可以充飢，更可補益脾肺腎，有助改善血糖水平。古時淮山又名薯蕷，古方薯蕷丸專針對氣血不足，體弱消瘦的人，讓他們調養氣血及脾腎，增強體質。</p>
<p><span style="color: #800000"><strong>二、改善血糖</strong></span><br />新鮮淮山的黏液是一種多糖蛋白的混合物，眾多大學研究證實可助降血糖，這種蛋白能黏著腸道食物，減緩吸收糖分的速度，避免飯後一下子血糖急升。另外亦可控制胰島素分泌過多，穩定血糖。淮山可作為糖尿病患者的食療，但效果及分量因人而異。</p>
